CABERNET SAUVIGNON

Region:

Los Robles & Los Morros - Central Valley, Chile
Grape Variety: 85% Cabernet Sauvignon, 10% Carmenere, 4% Cabernet Franc, 1% Malbec.
Production Technique: The grapes are hand-picked in mid-April. After the crush, the must is transferred to temperature-controlled stainless steel fermentation tanks for a six-day cold soak before undergoing alcoholic fermentation with gentle low-volume pumpovers. The wine then undergoes malolactic fermentation. Nearly 40% of this wine is aged in oak barrels.
Characteristics: Color: Bright ruby.
Bouquet: Elegant aromas of ripe fruit blended well with oak, chocolate and vanilla.
Taste: Lush and complex on the palate, with a sweet and attractive taste and good concentration. Powerful with good body and flavorful persistence.
Alcohol Content: 14%.
Total Acidity: 3.39 g/l.
This warm wine pairs well stewed red meats, game, lamb and semi-aged cheeses.

CHARDONNAY

Region:

Casablanca Valley, Chile
Grape Variety: 99% Chardonnay, 1% Sauvignon Blanc.
Production Technique: The grapes are hand-picked the last week in March. Stainless steel tanks, select yeasts, low fermentation temperatures, pumpovers and gentle
lee stirring are used in the vinification process. 50% of the finished wine is aged for 5 months in French and American oak barrels. Then the wine is lightly fined and cold-stabilized before bottling.
Characteristics: Color: Soft yellow
Bouquet: Tropical fruit with mineral notes, combined with soft hints of nut and marzipan.
Taste: Pineapple and melon flavors, with elegant notes of nuts.
Alcohol Content: 14%.
Total Acidity: 3.33 g/l.
This Chardonnay's fruit flavors combine well with spicy fish and shellfish, shrimp in garlic, fried seafood and grilled chicken.

CARMENERE

Region:

Los Robles - Colchagua Valley, Chile
Grape Variety: 87% Carmenère, 4% Syrah, 4% Petit Verdot, 4% Tempranillo, 1% Malbec.
Production Technique: The grapes are hand-picked in late April. After the crush, the must is transferred to temperature controlled stainless steel tanks for a cold soak before
undergoing alcoholic fermentation. The wine then undergoes malolactic fermentation at controlled temperatures. Nearly 50% of this wine is aged in oak barrels.
Characteristics: Color: Intense red.
Bouquet: Attractive aroma with hints of chocolate, black fruits, toffee and spices.
Taste: Big volume on the palate with soft round tannins with a firm, well balanced structure. Good balance between fruit and oak with a long, sweet finish.
Alcohol Content: 14%.
Total Acidity: 3.33 g/l.

This wine's soft and fruit forward palate marries well with most red meats, well-seasoned fish such as spicy grilled albacore tuna, French onion soup, or vegetable lasagna.
