Sauvignon Blanc

Region:

Casablanca Valley, Chile
Grape Variety: 100% Sauvignon Blanc.
Production Technique: The organically grown grapes were hand-picked the first week of March. After the crush, the vinification process took place using stainless steel tanks, selected yeasts, low fermentation temperatures, pump overs and gentle lees stirring to ensure optimal results.
Characteristics: Color: Transparent yellow.
Bouquet: Mineral notes and hints of peach and lime.
Taste: Full and round in the mouth with flavors of apple, pear and hints of herbal notes. The wine finishes with crisp acidity and good balance.
Alcohol Content: 13.2%.
Total Acidity: 4.9 g/l.
This wine pairs well with ceviche, sushi, smoked ham, goat cheese and salads.

Syrah

Region:

Colchagua Valley, Chile
Grape Variety: 100% Syrah.
Production Technique: The organically grown grapes were hand-picked in mid-April. After the crush, the must was transferred to temperature-controlled stainless steel fermentation tanks to cold soak before undergoing alcoholic fermentation. The wine then underwent malolactic fermentation naturally. 40% of this wine was aged in French oak barrels for six months and 60% was aged in stainless steel tanks.
Characteristics: Color: Deep ruby red in color.
Bouquet: Notes of rich mocha mixed with oak and ripe red fruit.
Taste: Soft, voluptuous tannins framed by red fruit and a touch of pepper spice, with good length and balance.
Alcohol Content: 14%.
Total Acidity: 3.28 g/l.
This wine pairs well with grilled or roasted meats, game such as duck, pâtés and sautéed vegetables.

Merlot

Region:

Rapel Valley, Chile
Grape Variety: 100% Merlot.
Production Technique: The organically grown grapes were hand-picked in mid-April. After the crush, the must was transferred to temperature-controlled stainless steel tanks for a cold soak before undergoing alcoholic fermentation. The wine then underwent malolactic fermentation which took place naturally by controlling the temperature to complete the process. 35% of this wine was aged in French oak barrels for six months, then blended in order to obtain a more complex character.
Characteristics: Color: Deep ruby.
Bouquet: Attractive red fruit aroma of strawberries and raspberries with hints of toast and vanilla.
Taste: Full and velvety with flavors of plum, cocoa and smoke, with smooth tannins and a firm, supple core.
Alcohol Content: 14%.
Total Acidity: 3.45 g/l.
This wine goes well with red and white meats, ham, and strong cheeses.

GEWÜRZTRAMINER

Region:

Cachapoal Valley, Chile
Grape Variety: 88% Gewurztraminer, 12% Sauvignon Blanc.
Production Technique: The organically grown grapes were hand-picked the last week of April when they reached the desired ripening. Fermentation took place in stainless steel tanks, with select yeasts at low fermentation temperatures, using pump-overs and gentle lees stirring to ensure optimal results.
Characteristics: Color: Soft yellow.
Bouquet: Jasmine flowers and roses blended with some soft herbaceous notes.
Taste: Fresh floral and fruit notes appear leaving a sweet sensation with a delicate acidity. A very tasty wine with long persistence.
Alcohol Content: 14.4%.
Total Acidity: 5.03 g/l.
This is a great wine to be married with Asian foods, fresh salads and roasted turkey.

CABERNET SAUVIGNON

Region:

Los Robles & Los Morros - Central Valley, Chile
Grape Variety: 85% Cabernet Sauvignon, 10% Carmenere, 4% Cabernet Franc, 1% Malbec.
Production Technique: The grapes are hand-picked in mid-April. After the crush, the must is transferred to temperature-controlled stainless steel fermentation tanks for a six-day cold soak before undergoing alcoholic fermentation with gentle low-volume pumpovers. The wine then undergoes malolactic fermentation. Nearly 40% of this wine is aged in oak barrels.
Characteristics: Color: Bright ruby.
Bouquet: Elegant aromas of ripe fruit blended well with oak, chocolate and vanilla.
Taste: Lush and complex on the palate, with a sweet and attractive taste and good concentration. Powerful with good body and flavorful persistence.
Alcohol Content: 14%.
Total Acidity: 3.39 g/l.
This warm wine pairs well stewed red meats, game, lamb and semi-aged cheeses.

CHARDONNAY

Region:

Casablanca Valley, Chile
Grape Variety: 99% Chardonnay, 1% Sauvignon Blanc.
Production Technique: The grapes are hand-picked the last week in March. Stainless steel tanks, select yeasts, low fermentation temperatures, pumpovers and gentle
lee stirring are used in the vinification process. 50% of the finished wine is aged for 5 months in French and American oak barrels. Then the wine is lightly fined and cold-stabilized before bottling.
Characteristics: Color: Soft yellow
Bouquet: Tropical fruit with mineral notes, combined with soft hints of nut and marzipan.
Taste: Pineapple and melon flavors, with elegant notes of nuts.
Alcohol Content: 14%.
Total Acidity: 3.33 g/l.
This Chardonnay's fruit flavors combine well with spicy fish and shellfish, shrimp in garlic, fried seafood and grilled chicken.

CARMENERE

Region:

Los Robles - Colchagua Valley, Chile
Grape Variety: 87% Carmenère, 4% Syrah, 4% Petit Verdot, 4% Tempranillo, 1% Malbec.
Production Technique: The grapes are hand-picked in late April. After the crush, the must is transferred to temperature controlled stainless steel tanks for a cold soak before
undergoing alcoholic fermentation. The wine then undergoes malolactic fermentation at controlled temperatures. Nearly 50% of this wine is aged in oak barrels.
Characteristics: Color: Intense red.
Bouquet: Attractive aroma with hints of chocolate, black fruits, toffee and spices.
Taste: Big volume on the palate with soft round tannins with a firm, well balanced structure. Good balance between fruit and oak with a long, sweet finish.
Alcohol Content: 14%.
Total Acidity: 3.33 g/l.

This wine's soft and fruit forward palate marries well with most red meats, well-seasoned fish such as spicy grilled albacore tuna, French onion soup, or vegetable lasagna.
